Some days, you just want to keep things simple and still end up with a meal that feels like a warm hug. Last night was one of those nights, and this dish was exactly what I needed.
Ingredients
2 boneless, skinless chicken breasts
4 medium potatoes
1 onion
3 cloves of garlic
1 teaspoon dried thyme
1 teaspoon paprika
1 tablespoon olive oil
Salt and pepper
How to Make It
Cut the chicken into bite-sized pieces.
Dice the potatoes into small cubes.
Chop the onion and mince the garlic.
Heat olive oil in a skillet over medium heat.
Add the chicken, and season with salt, pepper, thyme, and paprika.
Cook the chicken until browned, about 5 minutes.
Add the potatoes, onion, and garlic to the skillet.
Cook everything together, stirring occasionally, until potatoes are tender, about 20 minutes.
Serve
Spoon onto plates and enjoy while hot. Perfect for a cozy night in.
