After a long day, there’s nothing like a comforting meal that doesn’t require much effort. I remember burning this dish once because I wasn’t paying attention, but now it’s my go-to for a quick fix!
Ingredients
1 lb chicken breast, diced
1 cup uncooked rice
2 cups chicken broth
1 cup shredded cheddar cheese
1 onion, chopped
1 bell pepper, chopped
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
How to Make It
Heat a large pan over medium heat.
Add diced chicken and cook until browned.
Add chopped onion and bell pepper to the pan.
Stir in uncooked rice, garlic powder, paprika, salt, and pepper.
Pour in chicken broth and bring to a boil.
Reduce heat, cover, and simmer for 20 minutes.
Stir in shredded cheddar cheese until melted and creamy.
Serve
Spoon onto plates and enjoy straight from the pan, preferably in front of your favorite show.
