Chicken and Rice

You know those nights when you’re just too tired to even think about cooking? I had one of those last week. I wanted something comforting and easy, but I ended up burning the bottom of the pan because I got distracted by a hilarious TikTok. It was a mess. But then I remembered this simple, cheesy chicken and rice dish that basically cooks itself. You just throw everything in one pan and let it do its thing. The best part? It’s one of those meals that look like you put in way more effort than you did. It’s creamy, cheesy, and perfect for those lazy nights. Trust me, this one is a keeper for any weeknight when you just want to relax.

Ingredients

1 lb chicken breast, cut into bite-sized pieces

1 cup uncooked white rice

2 cups chicken broth

1 cup shredded cheddar cheese

1 cup frozen peas

1 onion, chopped

2 cloves garlic, minced

1 tablespoon olive oil

How to Make It

Heat olive oil in a large pan over medium heat.

Add chicken pieces and cook until browned.

Add onion and garlic, sauté until soft.

Stir in rice, ensuring it’s coated with oil.

Pour in chicken broth and bring to a boil.

Add peas, cover, and reduce heat to low.

Stir in cheddar cheese until melted and creamy.
