Ever had one of those days where you just want something comforting without the fuss? Yeah, me too. I was exhausted after work and had a serious craving for tacos but didn’t want to deal with all that chopping and cooking. That’s when I stumbled upon this one-pan taco rice recipe that seemed too easy to be true.
Ingredients
1 cup of rice
1 lb ground beef
1 packet taco seasoning
1 can diced tomatoes
2 cups chicken broth
1 cup shredded cheese
1 cup corn (frozen or canned)
1 cup black beans (drained and rinsed)
Salt and pepper to taste
Optional toppings: sour cream, avocado, green onions
How to Make It
In a large pan, brown the ground beef over medium heat. Drain excess fat.
Add the rice, taco seasoning, diced tomatoes, and chicken broth to the pan. Stir everything together.
Bring to a boil, then reduce heat and cover. Let it simmer for about 20 minutes or until the rice is cooked.
Stir in the corn and black beans. Cook for another 5 minutes.
Sprinkle the cheese on top, cover, and let it melt for a couple of minutes.
Serve
Serve hot, topped with your favorite toppings like sour cream, avocado, or green onions. Enjoy!
