One- Pan Cheesy Szpinak i makaron pomidorowy

Ever had one of those days where you just want comfort food but don’t feel like putting in the effort? Same here! The other night, I was craving something cheesy and satisfying but I didn’t want to deal with a ton of dishes. So, I decided to throw together this one-pan pasta. I was a little distracted while cooking and almost forgot the spinach—thankfully, I remembered it just in time!

Ingredients

8 ounces pasta of your choice.

2 cups fresh spinach.

1 can diced tomatoes (14.5 ounces).

1 cup vegetable broth.

1 cup shredded mozzarella cheese.

1 teaspoon garlic powder.

1 teaspoon dried basil.

Salt and pepper, to taste.

Olive oil for drizzling.

How to Make It

In a large pan, combine the pasta, diced tomatoes (with juice), vegetable broth, garlic powder, and dried basil.

Bring to a boil over medium heat, stirring occasionally.

Once boiling, reduce the heat and let simmer for about 10 minutes, or until the pasta is al dente.

Add the spinach and half of the mozzarella cheese, stirring until the cheese is melted and the spinach is wilted.

Season with salt and pepper to taste, and drizzle a little olive oil on top.

Sprinkle the remaining mozzarella cheese over the pasta and cover for a few minutes until the cheese is gooey and melted.

Serve

Serve hot, straight from the pan—perfect for cozy nights in!
