This easy pasta bake is perfect for a cozy weeknight dinner.
Ingredients
8 ounces of pasta (penne or rotini works best)
2 cups fresh spinach
2 medium tomatoes, chopped
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 teaspoon olive oil
1 teaspoon dried Italian herbs
Salt and pepper to taste
1/2 cup water or vegetable broth
How to Make It
Preheat your oven to 375°F (190°C).
Cook the pasta according to package instructions until al dente, then drain.
In a large bowl, mix the cooked pasta, spinach, chopped tomatoes, olive oil, Italian herbs, salt, and pepper.
Add the water or broth, and stir until everything is combined.
Transfer the mixture to a baking dish and top with mozzarella and Parmesan cheese.
