You know those nights when you just want comfort food but have zero energy to cook? I had one of those recently. I found myself staring at a sad box of pasta and a few random ingredients in the fridge. I thought, why not just throw everything together? I ended up burning the first batch because I got distracted scrolling through TikTok. But the second attempt was so good that it became a weeknight favorite!
Ingredients
8 ounces of pasta
2 cups fresh spinach
1 cup cherry tomatoes, halved
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
1 teaspoon garlic powder
Salt and pepper to taste
2 tablespoons olive oil
1/2 cup water
Optional: cooked chicken or other veggies
How to Make It
Preheat your oven to 375°F (190°C).
Cook the pasta according to package instructions, then drain.
In a large mixing bowl, combine the pasta, spinach, cherry tomatoes, garlic powder, olive oil, water, and half the mozzarella.
Mix well and season with salt and pepper.
Transfer the mixture to a baking dish and sprinkle the remaining mozzarella and parmesan on top.
Bake for 20-25 minutes, or until the cheese is melted and bubbly.
Serve
Dig in while it’s hot, directly from the baking dish. Perfect for cozy nights in!
