Last week, I thought I’d whip up a quick pasta dish, but I forgot to set the timer while I was scrolling through TikTok. Let’s just say my pasta was a little more ‘al dente’ than I planned.
But that little mishap led me to this cheesy spinach and tomato pasta bake that’s so easy, you can throw it together in no time! Just toss cooked pasta, fresh spinach, juicy tomatoes, and a whole lot of cheese into a baking dish. It’s like a warm hug on a plate!
Ingredients
2 cups of cooked pasta (any shape you like)
2 cups fresh spinach
1 cup cherry tomatoes, halved
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
Olive oil for drizzling
How to Make It
Preheat your oven to 375°F (190°C).
In a baking dish, combine the cooked pasta, fresh spinach, and cherry tomatoes.
Sprinkle the garlic powder, Italian seasoning, salt, and pepper over the top.
Add half of the mozzarella and all of the Parmesan cheese, and mix everything together.
Top with the remaining mozzarella cheese and drizzle with olive oil.
Bake for 20-25 minutes until the cheese is bubbly and golden.
