I was craving a cheesy, warm dinner but was too tired to deal with a ton of dishes afterward. So, I grabbed some chicken, a bag of frozen broccoli, and some cheese. I thought, ‘How hard can this be?’ Well, I accidentally grabbed the wrong cheese from the fridge and ended up with a weird blend. But guess what? It turned out even better than I expected!
Ingredients
2 cups of chicken breast, diced
2 cups of frozen broccoli
1 cup of shredded cheese (any blend you love)
1 cup of cooked rice or quinoa
1 cup of chicken broth
1 teaspoon of garlic powder
1 teaspoon of onion powder
Salt and pepper to taste
Olive oil for drizzling
How to Make It
Preheat your oven to 400°F (200°C).
In a large oven-safe pan, combine the diced chicken, frozen broccoli, cooked rice, chicken broth, garlic powder, onion powder, salt, and pepper.
Mix everything together until well combined.
Sprinkle the shredded cheese on top and drizzle with a little olive oil.
Bake in the oven for 25-30 minutes or until the chicken is cooked through and the cheese is bubbly.
