You know those weeknights when you just can’t with all the cooking? I had one of those recently. I wanted something comforting and cheesy but didn’t have the energy for a multi-step dinner. So, I threw together this one-pan cheesy chicken and broccoli bake and prayed it would turn out alright. Spoiler: it did!
Ingredients
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces.
2 cups broccoli florets, fresh or frozen.
1 cup uncooked rice (white or brown).
2 cups chicken broth.
1 cup shredded cheese (cheddar or your favorite).
1 teaspoon garlic powder.
Salt and pepper to taste.
Optional: 1 tablespoon olive oil for cooking.
How to Make It
Preheat your oven to 375°F (190°C).
In a large oven-safe skillet, combine the chicken pieces, broccoli, rice, chicken broth, garlic powder, salt, and pepper.
If using, drizzle olive oil over the mix and stir to combine.
Bring to a simmer, then sprinkle the cheese on top.
Transfer the skillet to the oven and bake for 25-30 minutes, until the chicken is cooked through and the rice is tender.
Serve
Dish it out straight from the pan and enjoy the gooey, cheesy goodness.
