Ever had one of those days where you just want to throw everything in a pan and call it dinner? Yeah, me too! I was totally wiped out after work last week and had zero energy to whip up something fancy. So, I decided to dig around in my fridge and pantry. I found some chicken, rice, and a bit of cheese. I thought, why not just toss it all together and see what happens?

Ingredients

2 cups cooked rice

2 cups diced chicken breast

1 cup shredded cheese

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup frozen mixed vegetables (optional)

How to Make It

Preheat your oven to 375°F (190°C).

In a large oven-safe pan, combine the cooked rice, diced chicken, and frozen vegetables if using.

Pour in the chicken broth and mix in the garlic powder, onion powder, salt, and pepper.

Top with shredded cheese.

Cover the pan with foil and bake for 25 minutes.

Remove the foil and bake for another 10 minutes, until the cheese is bubbly and golden.

Serve

Serve it straight from the pan for a cozy dinner that’s sure to please everyone!
