Ever had one of those evenings where you just want something warm and cheesy without all the fuss? Yeah, me too. I was totally wiped out after a long day and wanted to whip up something easy. I thought I could just throw some chicken and potatoes together in a pan—no big deal, right?

Well, I may have underestimated the cooking time. I got distracted scrolling through my phone and nearly burned the chicken. Luckily, I caught it just in time, and what came out was a gooey, cheesy masterpiece that made everything worth it!

Ingredients

4 chicken breasts.

4 medium potatoes, diced.

1 cup shredded cheddar cheese.

1 tablespoon olive oil.

1 teaspoon garlic powder.

1 teaspoon paprika.

Salt and pepper to taste.

1 teaspoon Italian seasoning.

How to Make It

Preheat your oven to 400°F (200°C).

In a large pan, heat olive oil over medium heat.

Add diced potatoes and season with salt, pepper, garlic powder, and paprika. Cook for about 10 minutes until they start to soften.

Push the potatoes to the side and add chicken breasts to the pan. Sprinkle with Italian seasoning.

Top everything with shredded cheddar cheese.

Transfer the pan to the oven and bake for 25–30 minutes until the chicken is cooked through and the cheese is bubbly.

Serve

Serve it hot, straight from the pan. It’s perfect for digging in with a fork, or just grabbing a piece of chicken and potato with your hands!
