After a long day, this one-pan pasta is the perfect comfort food.
Ingredients
8 ounces of pasta (any shape you like)
1 can (15 ounces) of diced tomatoes
2 cups of vegetable broth
1 small onion, diced
2 cloves of garlic, minced
1 teaspoon of Italian seasoning
1 cup of shredded mozzarella cheese
Salt and pepper to taste
Fresh basil for garnish (optional)
How to Make It
In a large skillet, combine the diced tomatoes, vegetable broth, pasta, onion, garlic, and Italian seasoning.
Bring to a boil over medium heat. Reduce the heat and let it simmer for about 10-12 minutes, stirring occasionally.
When the pasta is cooked and the liquid is mostly absorbed, stir in the mozzarella cheese until melted.
Season with salt and pepper to taste.
Garnish with fresh basil if desired.
Serve
