Ingredients
8 ounces of pasta (penne or fusilli work great)
2 cups of vegetable broth
1 cup of diced bell peppers
1 cup of fresh spinach
1 cup of shredded cheese (mozzarella or cheddar)
1 teaspoon of garlic powder
1 teaspoon of Italian seasoning
Salt and pepper to taste
How to Make It
Preheat your oven to 375°F (190°C).
In a large oven-safe pan, combine the uncooked pasta, vegetable broth, bell peppers, garlic powder, Italian seasoning, salt, and pepper.
Stir everything together and bring to a simmer over medium heat.
Once simmering, reduce the heat and let it cook for 10 minutes, stirring occasionally.
Remove from heat and stir in the spinach and half of the cheese.
Top with the remaining cheese and transfer the pan to the oven.
Bake for 15 minutes, or until the cheese is melted and bubbly.
