You know those nights when you just want to throw everything in one pan and call it dinner? Yeah, I had one of those. I was exhausted after a long day, and the thought of doing dishes made me want to crawl into bed instead. I decided to whip up something quick, but I totally blanked on adding the spices at first and ended up with a bland chicken mess. After a quick rescue mission with some garlic powder and a splash of lemon juice, I made it work—and now it’s a family favorite!
Ingredients
2 chicken breasts, cut into bite-sized pieces.
2 cups broccoli florets.
1 cup shredded cheddar cheese.
1/2 cup cream cheese, softened.
1 teaspoon garlic powder.
1 teaspoon lemon juice.
Salt and pepper to taste.
1 tablespoon olive oil.
1/2 cup breadcrumbs (optional).
How to Make It
Preheat the oven to 375°F (190°C).
In a large bowl, mix chicken, broccoli, cream cheese, garlic powder, lemon juice, salt, and pepper.
Transfer the mixture to a baking dish and spread it out evenly.
Sprinkle shredded cheddar cheese on top.
If using, add breadcrumbs on top for extra crunch.
Bake for 25-30 minutes, until the chicken is cooked through and the cheese is bubbly.
Serve
Serve it straight from the pan with a side of rice or crusty bread to soak up the cheesy goodness!
