Ingredients
8 oz pasta (penne or fusilli work great)
1 can (14 oz) diced tomatoes
2 cups vegetable broth
1 cup heavy cream
1 cup grated Parmesan cheese
1 tsp garlic powder
Salt and pepper to taste
Fresh basil, chopped
How to Make It
Add the pasta, diced tomatoes, vegetable broth, and garlic powder to a large pan over medium heat.
Bring to a boil and then reduce to a simmer.
Cook for about 10-12 minutes until the pasta is al dente, stirring occasionally.
Stir in the heavy cream and Parmesan cheese until melted and creamy.
Add salt, pepper, and fresh basil to taste.
Serve
