Ever had one of those days where you just want to throw something together and call it dinner? Yep, that was me last night. I had a busy day and was too tired to deal with anything complicated. So, I grabbed some pasta, cheese, and whatever I could find in the fridge. I almost forgot to add the sauce, which would’ve been a disaster, but I managed to dump everything in one pan just in time!

Ingredients

8 ounces pasta (any kind)

1 cup marinara sauce

1 cup shredded mozzarella cheese

1 cup cooked chicken, diced (optional)

1 cup fresh spinach (or any veggies)

1 teaspoon Italian seasoning

Salt and pepper to taste

1 tablespoon olive oil

1/4 cup grated Parmesan cheese

Fresh basil for garnish (optional)

How to Make It

Preheat your oven to 375°F (190°C).

In a large oven-safe pan, combine the uncooked pasta, marinara sauce, and enough water to cover the pasta.

Add olive oil, Italian seasoning, salt, and pepper. Stir well.

If using chicken, add it along with the spinach.

Top with mozzarella cheese and sprinkle Parmesan on top.

Cover with foil and bake for 25 minutes.

Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

Serve

Garnish with fresh basil if desired and dig in straight from the pan. It’s so gooey and comforting!
