You know those days when you’re just too tired to cook but still crave something comforting? Yeah, I had one of those last week. I wanted pasta but didn’t want to deal with multiple pots or a long cleanup. So, I decided to throw everything into one pan and see what happened. I mean, how hard could it be?
Of course, I almost burned it the first time because I got distracted scrolling through my phone. But the second attempt was a complete win! The spinach wilted perfectly, the tomatoes burst with flavor, and the cheese? Oh boy, it was melty heaven. It was like a creamy hug in a bowl!
Now, I can’t stop making it. It’s ridiculously easy and requires minimal effort, which is exactly what I need on those lazy nights. Plus, it looks great in a bowl, and I’ve been sharing photos of it everywhere. Seriously, if you’re looking for a quick weeknight dinner that’s cheesy and satisfying, this is it! Ingredients
8 ounces of pasta (any shape you like).
2 cups of fresh spinach.
1 cup of cherry tomatoes, halved.
1 cup of shredded mozzarella cheese.
2 tablespoons of olive oil.
1 teaspoon of garlic powder.
1 teaspoon of salt.
½ teaspoon of black pepper.
2 cups of vegetable broth.
Parmesan cheese, for serving (optional).
How to Make It
In a large skillet, heat the olive oil over medium heat.
Add the pasta, spinach, tomatoes, garlic powder, salt, and black pepper to the skillet.
Pour in the vegetable broth and stir everything together.
Bring to a boil, then reduce to a simmer and cover.
Cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente.
Remove from heat and stir in the mozzarella cheese until melted.
Serve
Serve it straight from the pan with a sprinkle of Parmesan cheese on top. It’s perfect for a cozy night in!
