After a long day, this one-pan pasta is the perfect quick meal.
Ingredients
8 oz pasta (any shape you like)
2 cups cherry tomatoes, halved
2 cups vegetable broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup fresh basil, chopped
2 cloves garlic, minced
Salt and pepper to taste
How to Make It
In a large pan, combine the pasta, cherry tomatoes, vegetable broth, and garlic.
Bring to a boil over medium heat, then reduce to a simmer. Cook for about 10 minutes, stirring occasionally.
Once the pasta is al dente, stir in the heavy cream and Parmesan cheese.
Continue to cook until the sauce thickens, about 2-3 minutes.
Remove from heat and fold in the fresh basil. Season with salt and pepper to taste.
Serve
Serve it straight from the pan for a cozy meal, garnished with extra basil if you have it!
