Ingredients
2 cups uncooked rice.
4 chicken thighs, boneless and skinless.
1 cup frozen peas.
1 cup grated carrots.
1 can cream of chicken soup.
2 cups shredded cheese (like cheddar).
1 teaspoon garlic powder.
1 teaspoon onion powder.
Salt and pepper to taste.
2 cups water.
How to Make It
Preheat your oven to 375°F (190°C).
In a large baking dish, mix the uncooked rice, garlic powder, onion powder, salt, and pepper.
Place the chicken thighs on top of the rice mixture.
In a bowl, combine the cream of chicken soup, water, peas, and carrots.
Pour the mixture over the chicken and rice.
Sprinkle the shredded cheese evenly on top.
Cover the dish with foil and bake for 30 minutes.
Remove the foil and bake for an additional 10-15 minutes or until the chicken is cooked through.
