Ever had one of those days where you just want to throw something together and call it dinner? Yup, that was me last night. I was tired after a long day and didn’t want to deal with a million pots, so I decided to go for a one-pan wonder. I almost forgot to add the cheese at the end, which would have been a disaster because who wants a cheesy bake without the cheese?! Luckily, I caught it just in time, and let me tell you, it saved the whole dish.

Ingredients

1 cup uncooked rice

2 cups broccoli florets

3 cups vegetable broth

1 cup shredded cheese (cheddar or your choice)

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

How to Make It

Preheat your oven to 375°F (190°C).

In a large baking dish, combine the rice, broccoli, vegetable broth, garlic powder, onion powder, salt, and pepper.

Add the olive oil and milk, and stir everything together.

Cover the dish with aluminum foil and bake for 25 minutes.

Remove the foil, sprinkle the cheese on top, and bake for an additional 10 minutes until the cheese is melted and bubbly.

Serve

Serve straight from the dish, and enjoy this cheesy, comforting meal with a fork!
