This cheesy rice bake is an easy, comforting meal that comes together in one pan!
Ingredients
1 cup uncooked rice
2 cups vegetable broth
2 cups chopped broccoli
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 teaspoon garlic powder
1 teaspoon onion powder
Salt to taste
Black pepper to taste
1 tablespoon olive oil
How to Make It
Preheat your oven to 375°F (190°C).
In a large oven-safe pan, heat the olive oil over medium heat.
Add the uncooked rice, garlic powder, onion powder, salt, and pepper.
Pour in the vegetable broth and bring to a simmer.
Add the chopped broccoli and half of the cheddar and mozzarella cheese.
Stir well and remove from heat.
Top with the remaining cheese and cover the pan with foil.
Bake in the preheated oven for 20 minutes.
Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
