I wanted something warm and cheesy that didn’t take forever to make.
Ingredients
2 medium zucchinis, sliced
1 cup uncooked rice
2 cups vegetable broth
1 cup shredded cheese (like mozzarella or cheddar)
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
How to Make It
Preheat your oven to 375°F (190°C).
In a large bowl, combine the sliced zucchinis, uncooked rice, vegetable broth, garlic powder, onion powder, salt, and pepper.
Stir in half of the shredded cheese and half of the Parmesan cheese.
Spread the mixture into a greased baking dish.
Top with the remaining shredded cheese and Parmesan cheese.
Bake for 40-45 minutes, until the rice is cooked and the top is golden and bubbly.
Serve
