How to Make It
Preheat your oven to 400°F (200°C).
In a large oven-safe skillet, heat olive oil over medium heat.
Add sliced potatoes and season with salt and pepper.
Cook for about 15 minutes, stirring occasionally, until potatoes are crispy and golden.
Make four wells in the potatoes and crack an egg into each well.
Sprinkle cheese over everything and transfer the skillet to the oven.
Bake for 10-12 minutes, or until the eggs are set to your liking.
