It was one of those days when the thought of cooking felt like climbing a mountain. Yet, the craving for something comforting and cheesy was too strong to ignore. So, I raided the pantry and found some potatoes and cheese, which led me to the perfect solution: a cheesy potato skillet. Sometimes, the simplest things bring the most joy.
Ingredients
4 large potatoes, peeled and sliced thin
1 cup shredded cheddar cheese
1 small onion, diced
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon paprika
Salt to taste
Pepper to taste
2 tablespoons olive oil
How to Make It
Heat olive oil in a skillet over medium heat.
Add diced onion and minced garlic. Sauté until soft.
Add sliced potatoes to the skillet.
Sprinkle with oregano, paprika, salt, and pepper.
Cook for about 10-15 minutes, stirring occasionally, until potatoes are tender.
Sprinkle shredded cheddar cheese over the potatoes.
Cover and let the cheese melt for about 3-5 minutes.
Serve
Spoon onto plates and enjoy it warm, straight from the skillet.
